Keto Beef Burrito Bowl Variations
This dish could be called a variety of names — from a Keto Beef Burrito Bowl to an unstuffed burrito or open-faced burrito. Personally, I love calling it a burrito bowl because it reminds me of my favorite Chipotle meal! You can also use keto-friendly tortillas to turn this skillet into beef street tacos, adding even more texture and flavor to your meal.
Ingredients
- 1 pound ground beef
- 1/2 onion, chopped
- 1/2 red bell pepper, chopped
- 1/2 green bell pepper, chopped
- 2 tsp minced garlic
- 2 tsp chili powder
- 2 tsp cumin
- 1 tsp paprika
- Cayenne pepper, to taste
- 1 1/2 cups cauliflower rice
- 1/2 cup Rotel (drained)
- 1 cup fiesta blend shredded cheese
- Salt and pepper, to taste
- 5 zero-carb street taco tortillas, cut into strips
Instructions
- In a large skillet over medium-high heat, add the ground beef, onions, and peppers. Cook until the meat is browned and the vegetables have softened. Drain any excess fat.
- Lower the heat to medium, then stir in the garlic, chili powder, cumin, paprika, cayenne, and salt and pepper to taste. Sauté for 1 more minute.
- Mix in the cauliflower rice and Rotel. Continue cooking for 2 minutes, stirring occasionally.
- Add the tortilla strips and stir to combine.
- Sprinkle the shredded cheese on top. Turn off the heat and let the cheese melt before serving.
Sides for Your Keto Beef Burrito Skillet

Since this skillet already has beef, cauliflower rice, and veggies, it makes a well-rounded meal on its own. But if you’re looking to add a little extra flair, consider serving it with one of these keto-friendly sides:
- Keto Mexican street cauliflower or keto cilantro lime cauliflower rice to add more Mexican-inspired flavors.
- A refreshing keto aguachile salad, packed with fresh ingredients and a zesty kick.
- For dessert, keto churros will satisfy your sweet tooth without the carbs.
Best Meat for Keto Burrito Bowls
I’ve used ground beef for this recipe since it’s a classic choice and full of flavor, but feel free to get creative! Ground chorizo, turkey, or chicken all make excellent alternatives. If you opt for leaner meats like turkey or chicken, you may want to increase the spices a bit. A dash more cayenne pepper and paprika will amp up the flavors beautifully.
This Keto Beef Burrito Skillet is a perfect addition to your keto recipe collection — quick, customizable, and absolutely delicious! Enjoy this low-carb dish for dinner or meal prep for the week ahead!
