Directions for Strawberries and Cream Protein Pancakes

Let’s create these fluffy protein flapjacks!

Mix the Dry Ingredients

In a mixing bowl, I combine 20g oat flour, 30g vanilla protein powder, 9g cornstarch, and 1g baking powder, whisking until blended for a smooth Strawberries and Cream Protein Pancakes base.

Add Wet Ingredients

I add 60g egg whites, 75g Greek yogurt, 25g water, and 3 drops red food coloring (if using) to the dry mix. I stir gently until just combined, avoiding overmixing to keep these nutritious pancake bites fluffy.

Fold in Chocolate Chips

I fold in 7g white chocolate chips for a creamy touch in these healthy breakfast stacks, saving toppings for after cooking.

Cook the Pancakes

I heat a nonstick skillet over medium heat, lightly greasing if needed. I pour ¼ cup batter per pancake, cooking 1–2 minutes per side until bubbles form and edges set, making 4 fluffy protein flapjacks.

Add Toppings

I top with ¼ cup sliced strawberries, 1 tbsp whipped cream, and 1 tsp light syrup (if using) for a decadent high-protein breakfast.

Serve

I serve these nutritious pancake bites warm, savoring their fluffy, strawberry-and-cream flavor straight from the skillet.

Notes

  • You must use a whey casein blend or just casein. Whey protein is too dry for this recipe
  • When bubbles start to form and don’t fill in with batter it’s time to flip the pancakes
  • The pancakes will lose some of their pink hue on the top and bottom from cooking, this is normal!
  • If you add in the white chocolate chips to the batter and try to cook the pancakes with them they will turn black and burn. Don’t do this!
