For the Cheesecake Mixture:
- 16 oz cream cheese softened
- 1 cup powdered sugar
- 1/4 cup unsweetened cocoa powder
- 1 tsp vanilla extract
- 1/2 tsp sea salt
- 1/4 cup Baileys Irish Cream
For the Chocolate Whipped Cream:
- 1 cup heavy whipping cream chilled
- 2 tbsp Baileys Irish Cream
- 1 tsp vanilla extract
- 2 tbsp unsweetened cocoa powder
- 2 tbsp powdered sugar
Prepare the Cheesecake Mixture:
In a medium bowl, beat cream cheese, powdered sugar, cocoa powder, vanilla extract, and sea salt until combined.
Add Baileys and continue beating until smooth and fluffy.
Prepare the Chocolate Whipped Cream:
In a separate bowl, beat heavy whipping cream until it doubles in volume and starts to thicken.
Add Baileys, vanilla extract, cocoa powder, and powdered sugar. Beat until stiff peaks form.
Layer the Ingredients:
Spoon cheesecake mixture and whipped cream mixture into large piping bags.
In four lowball glasses, layer cookie crumbles, cheesecake mixture, and whipped cream mixture. Repeat with a second layer of cookie crumbles and cheesecake mixture.
