Ingredients
  

  • 4 medium zucchini quartered lengthwise
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon garlic powder
  • Kosher salt and freshly ground black pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley chopped (for garnish)

Instructions
 

  • Prep the Oven: Preheat your oven to 350°F (175°C). Lightly coat a cooling rack with nonstick spray and place it over a baking sheet. This helps the zucchini sticks crisp up evenly.
  • Season the Zucchini: In a small bowl, mix together the Parmesan cheese, thyme, oregano, basil, garlic powder, salt, and pepper. Place the zucchini sticks onto the prepared baking sheet. Drizzle with olive oil, then evenly sprinkle the Parmesan mixture over the top.
  • Bake to Perfection: Bake for about 15 minutes, or until the zucchini is tender. Then, switch the oven to broil and cook for another 2-3 minutes to achieve a crispy, golden brown topping.
  • Garnish & Serve: Remove from the oven and garnish with fresh parsley. Serve immediately while warm and crispy!

  • Refrigerate leftovers in an airtight container for up to 3 days.
  • Reheat in the oven at 375°F for about 5 minutes to maintain crispiness.
