Ingredients

  • 2 cups fresh blackberries plus extra for garnish
  • 1/2 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 1/2 cups heavy cream chilled
  • 1 tsp vanilla extract
  • 2 tbsp powdered sugar
  • Fresh mint leaves optional, for garnish

Instructions

Make the Blackberry Puree:

  • In a medium saucepan over medium heat, combine 2 cups blackberries, 1/2 cup granulated sugar, and 1 tbsp lemon juice.
  • Cook for 5-7 minutes, stirring occasionally, until the berries soften and release their juices.
  • Blend the mixture until smooth using a blender or immersion blender.
  • Strain through a fine mesh sieve to remove seeds, then let the puree cool to room temperature.

Whip the Cream:

  • In a large, chilled mixing bowl, beat 1 1/2 cups heavy cream with an electric mixer until soft peaks form.
  • Add 1 tsp vanilla extract and 2 tbsp powdered sugar, then continue beating until stiff peaks form.

Fold in the Puree:

  • Gently fold the cooled blackberry puree into the whipped cream, mixing just until combined to preserve the airy texture.

Chill and Serve:

  • Spoon the mousse into serving glasses or bowls.
  • Refrigerate for at least 2 hours to set.
  • Garnish with fresh blackberries and mint leaves before serving as a stunning summer dessert.

Notes

  • Use Fresh Berries: Fresh blackberries offer the best flavor, but thawed frozen berries work if drained well.
  • Chill Equipment: Refrigerate the mixing bowl and whisk for faster, firmer whipped cream.
  • Don’t Overmix: Fold the puree gently to maintain the mousse’s light, airy texture in this summer dessert.
  • Taste the Puree: Adjust sugar or lemon juice based on the berries’ sweetness or tartness.
  • Serve Cold: Keep refrigerated until serving for the most refreshing experience.
