Ingredients
  

  • 3 cups cooked chicken chopped see notes in the post for how to cook shredded chicken
  • 1 pound bacon diced and cooked until crisp
  • 1 cup cherry tomatoes cut in half
  • 1/2 small red onion diced small
  • 2 stalks celery diced
  • 1/2 cup mayonnaise I used light
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper

Instructions
 

Cook the Bacon

  • Dice the bacon into small pieces.
  • Cook in a preheated pan over medium heat until crispy.
  • Remove with a slotted spoon and place on a paper towel-lined plate.

Make the Dressing

  • In a small bowl, whisk together: Mayonnaise, Greek yogurt, Lemon juice, Garlic & onion powder, Salt & black pepper.
  • Taste and adjust seasoning as needed.

Assemble the Salad

  • In a large mixing bowl, combine: Shredded chicken, Crispy bacon, Cherry tomatoes, celery, red onion, and chives, repared dressing
  • Toss everything together until well coated.
  • Chill in the fridge for at least 30 minutes before serving.

Notes

  • Want an easier method? Bake bacon in the oven at 400°F (200°C) for 12-15 minutes for even crispier, less greasy pieces!
  • Use crispy bacon – Soft bacon won’t give you the crunch that makes this salad pop.
  • Stick with cherry tomatoes – They hold their shape better than diced tomatoes, preventing excess moisture.
  • Keep lettuce separate – If adding lettuce, serve it fresh rather than mixing it in to avoid wilting.
  • Lighten it up – Use light mayo or swap it for more Greek yogurt for a lower-calorie option.
  • Customize it! Add avocado, shredded cheddar, hard-boiled eggs, or even grapes for a sweet-savory twist.
