- 1 1/2 cups rolled oats
- 1/2 cup whole wheat flour
- 1/4 cup ground flaxseeds
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/3 cup honey or maple syrup
- 1/2 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1 large egg
- 1 1/2 cups fresh or frozen blueberries
Preheat the oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper or lightly grease it.
In a large mixing bowl, combine the rolled oats, whole wheat flour, ground flaxseeds, baking powder, salt, and cinnamon.
In a separate bowl, whisk together the honey (or maple syrup), applesauce, vanilla extract, and egg until smooth.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Gently fold in the blueberries, being careful not to crush them.
Spread the batter evenly into the prepared baking dish.
Bake for 30-35 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.
Allow the bars to cool completely before cutting into squares.
- For added crunch, try adding chopped nuts like almonds or walnuts.
- Swap honey with maple syrup or agave nectar for different flavors.
- Blueberries can be replaced with raspberries or strawberries.
- Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
- For meal prep, make a double batch and freeze half for later. Reheat in the microwave for 15-20 seconds.
