Ingredients
  

  • 1 1/2 cups rolled oats
  • 1/2 cup whole wheat flour
  • 1/4 cup ground flaxseeds
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/3 cup honey or maple syrup
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 1/2 cups fresh or frozen blueberries

Instructions
 

  • Preheat the oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper or lightly grease it.
  • In a large mixing bowl, combine the rolled oats, whole wheat flour, ground flaxseeds, baking powder, salt, and cinnamon.
  • In a separate bowl, whisk together the honey (or maple syrup), applesauce, vanilla extract, and egg until smooth.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Gently fold in the blueberries, being careful not to crush them.
  • Spread the batter evenly into the prepared baking dish.
  • Bake for 30-35 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.
  • Allow the bars to cool completely before cutting into squares.

Notes

  • For added crunch, try adding chopped nuts like almonds or walnuts.
  • Swap honey with maple syrup or agave nectar for different flavors.
  • Blueberries can be replaced with raspberries or strawberries.
  • Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
