Ingredients
  

  • 1 pint fresh blueberries
  • 2 peaches diced
  • 2 Persian cucumbers sliced
  • 1/2 cup crumbled feta
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 1 tablespoon finely chopped basil
  • Kosher salt and fresh ground black pepper to taste

Instructions
 

Prep the produce:

  • Slice the peaches (leave the skin on for extra texture)
  • Thinly slice the Persian cucumbers
  • Rinse and dry the blueberries
  • Combine everything in a large salad bowl

Add the feta:

  • For the best flavor, use block feta and crumble it yourself.
  • You can also cube the feta if you prefer a chunkier texture.

Make the lemon basil vinaigrette:

  • In a jar, mix together lemon juice, dijon mustard, honey, olive oil, salt, and pepper.
