- 1 pint fresh blueberries
- 2 peaches diced
- 2 Persian cucumbers sliced
- 1/2 cup crumbled feta
- 3 tablespoons fresh lemon juice
- 1 tablespoon dijon mustard
- 1 tablespoon honey
- 1 tablespoon olive oil
- 1 tablespoon finely chopped basil
- Kosher salt and fresh ground black pepper to taste
Prep the produce:
Slice the peaches (leave the skin on for extra texture)
Thinly slice the Persian cucumbers
Rinse and dry the blueberries
Combine everything in a large salad bowl
Add the feta:
For the best flavor, use block feta and crumble it yourself.
You can also cube the feta if you prefer a chunkier texture.
Make the lemon basil vinaigrette:
In a jar, mix together lemon juice, dijon mustard, honey, olive oil, salt, and pepper.
Finely slice the basil (chiffonade style) and stir it in.
Seal the jar and shake until fully combined.
Toss and serve:
Pour the vinaigrette over the salad ingredients.
Gently toss to combine, being careful not to crush the fruit.
Serve immediately or chill until ready to enjoy.
