Ingredients

  • 2 bone-in skin-on chicken breasts (about 1.5–2 lbs/0.7–0.9 kg)
  • 2 tbsp 30 ml olive oil
  • 1 tsp salt
  • ½ tsp ground black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 lemon sliced
  • 2 garlic cloves smashed
  • Fresh rosemary or thyme sprigs optional

Instructions

Preheat and Prep

  • I preheat the oven to 400°F (200°C) and pat 2 chicken breasts dry with paper towels to ensure crispy skin for this tender chicken breast.

Season the Chicken

  • In a small bowl, I mix 1 tsp salt, ½ tsp black pepper, 1 tsp garlic powder, 1 tsp paprika, and 1 tsp dried thyme. I drizzle 2 tbsp olive oil over the chicken, rubbing it in, then apply the seasoning blend, tucking some under the skin for extra flavor in this cozy recipe.

Arrange the Pan

  • I place the chicken skin-side up in a baking dish or skillet, tucking lemon slices, 2 smashed garlic cloves, and optional rosemary or thyme sprigs around it to infuse this roasted chicken with aroma.

Roast to Perfection

  • I roast for 35–45 minutes until the internal temperature reaches 165°F and the skin is golden. I let the chicken rest 5 minutes to lock in juices for this juicy chicken dish.

Serve Immediately

  • I serve this Bone-In Chicken Breast hot, drizzled with pan juices and garnished with fresh herbs for a stunning roasted chicken.

Notes

  • Serve with roasted vegetables, mashed potatoes, or a simple salad.
  • Store leftovers in the fridge for up to 3 days.
