Ingredients
  

  • 12 oz pasta penne, fusilli, or your choice
  • 1 head broccoli cut into small florets
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 package 5.2 oz Boursin garlic and herb cheese
  • 1/2 cup pasta water reserved
  • Salt and pepper to taste
  • Grated Parmesan cheese for garnish optional

Instructions
 

  • Bring a large pot of salted water to a boil. Cook pasta according to package instructions, adding broccoli florets during the last 3 minutes of cooking.
  • Drain pasta and broccoli, reserving 1/2 cup of pasta water.
  • In the same pot, heat olive oil over medium heat. Add garlic and sauté for 1–2 minutes until fragrant.
  • Reduce heat to low, add the Boursin cheese and reserved pasta water, stirring until a creamy sauce forms.
  • Add pasta and broccoli back into the pot and toss to coat evenly with the sauce.
  • Season with salt and pepper to taste. Serve warm, garnished with Parmesan if desired.

Notes

  • Use whole wheat or gluten-free pasta as desired.
  • Add grilled chicken or shrimp for a protein boost.
  • Boursin cheese melts best at low heat—avoid boiling the sauce.
