- 12 oz pasta penne, fusilli, or your choice
- 1 head broccoli cut into small florets
- 1 tbsp olive oil
- 2 cloves garlic minced
- 1 package 5.2 oz Boursin garlic and herb cheese
- 1/2 cup pasta water reserved
- Salt and pepper to taste
- Grated Parmesan cheese for garnish optional
Bring a large pot of salted water to a boil. Cook pasta according to package instructions, adding broccoli florets during the last 3 minutes of cooking.
Drain pasta and broccoli, reserving 1/2 cup of pasta water.
In the same pot, heat olive oil over medium heat. Add garlic and sauté for 1–2 minutes until fragrant.
Reduce heat to low, add the Boursin cheese and reserved pasta water, stirring until a creamy sauce forms.
Add pasta and broccoli back into the pot and toss to coat evenly with the sauce.
Season with salt and pepper to taste. Serve warm, garnished with Parmesan if desired.
- Use whole wheat or gluten-free pasta as desired.
- Add grilled chicken or shrimp for a protein boost.
- Boursin cheese melts best at low heat—avoid boiling the sauce.
