  • 2 cups 200g broccoli florets, finely chopped
  • ½ cup 60g breadcrumbs
  • ¼ cup 25g grated Parmesan cheese
  • 1 large egg
  • ¼ cup 15g chopped fresh parsley
  • ¼ tsp garlic powder
  • Salt and pepper to taste
  • 2 –3 tbsp olive oil for frying

For Serving (Optional):

  • Yogurt dip ranch dressing, or sriracha mayo

Prep the Mixture

  • In a large bowl, I combine 1 lb minced chicken, 2 cups chopped broccoli, ½ cup breadcrumbs, ¼ cup Parmesan, 1 egg, ¼ cup parsley, ¼ tsp garlic powder, salt, and pepper, mixing until well blended for cohesive healthy chicken cakes.

Form the Fritters

  • I shape the mixture into small patties (about 2 tbsp each), making roughly 12–14 fritters, ensuring they hold together for crispy chicken fritters.

Cook the Fritters

  • I heat 2–3 tbsp olive oil in a large skillet over medium heat. I add the fritters, cooking 3–4 minutes per side until golden brown and cooked through (165°F internal temperature for chicken).

Drain and Serve

  • I transfer the fritters to a paper towel-lined plate to drain excess oil, then serve hot with yogurt dip or sriracha mayo, enjoying these savory broccoli patties.
