Ingredients
  

  • 1 tablespoon olive oil or preferred cooking oil
  • 1 pound lean ground beef or ground turkey for a lighter option
  • 3 garlic cloves minced
  • 1 medium onion diced (white or yellow)
  • 2 medium carrots diced
  • 4 cups chopped green cabbage
  • 1 can 28 oz crushed tomatoes
  • 2 tablespoons tomato paste adds depth of flavor
  • 6 cups beef broth or vegetable broth for a lighter version
  • 1/2 cup uncooked long-grain white rice or cooked brown rice added after cooking
  • 1 tablespoon Worcestershire sauce or soy sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper
  • 1 tablespoon brown sugar optional, balances acidity
  • 1/2 teaspoon red pepper flakes optional, for extra heat
  • Fresh parsley chopped (for garnish)

Instructions
 

Sauté the Meat & Aromatics:

  • Heat olive oil in a large soup pot over medium heat.
  • Add ground beef, breaking it apart as it cooks.
  • Stir in garlic and onions, cooking until softened (about 5 minutes).

Add Veggies & Liquids:

  • Stir in carrots, cabbage, crushed tomatoes, tomato paste, Worcestershire sauce, and seasonings.
  • Pour in beef broth and bring the mixture to a boil.

Simmer the Soup:

  • Reduce heat, cover, and let simmer for 25–30 minutes.
  • Stir in the rice and continue cooking for another 10 minutes, or until rice is tender.

Serve & Enjoy:

  • Taste and adjust seasonings as needed.
  • Garnish with fresh parsley and serve with crusty bread!

Notes

Instant Pot Method:

  1. Sauté: Use the “Sauté” function to brown the beef, onions, and garlic.
  2. Pressure Cook: Add remaining ingredients (except rice) and pressure cook on HIGH for 15 minutes.
  3. Add Rice & Finish: Stir in rice, let sit for 10 minutes until softened, then serve.
