The California BLT Chopped Bagel is a vibrant, satisfying Quick Lunch that combines fresh, creamy, and crispy flavors in every bite. Easy to prepare, endlessly customizable, and perfect for any occasion, it’s a West Coast classic that’s sure to become a kitchen favorite.
I toast 2 bagels in a toaster or grill pan until golden and crisp, about 2–3 minutes, for a sturdy base.
Cook Bacon
In a skillet over medium heat, I cook 4 slices of bacon until crispy, about 6–8 minutes. I drain on paper towels.
Prep Veggies
I slice 1 avocado and 1 tomato into thin slices. I chop 1 cup of romaine or spinach finely for a fresh crunch.
Spread Condiments
I spread 1 tbsp mayonnaise (and ½ tbsp Dijon mustard, if using) on each bagel half, ensuring even coverage.
Assemble Bagel
On the bottom half of each bagel, I layer chopped lettuce, tomato slices, avocado, and 2 bacon slices. I season with a pinch of salt and pepper, then top with the other bagel half, pressing lightly.
Serve
I serve the California BLT Chopped Bagel immediately, sliced in half for easy eating.
