Ingredients
  

  • 2 bagels plain or whole wheat
  • 4 slices bacon cooked crispy
  • 1 ripe avocado peeled, pitted, and sliced
  • 1 medium tomato sliced
  • 1 cup romaine or spinach chopped
  • 2 tbsp mayonnaise
  • 1 tbsp Dijon mustard optional
  • Salt and pepper to taste

Instructions
 

Toast Bagels

  • I toast 2 bagels in a toaster or grill pan until golden and crisp, about 2–3 minutes, for a sturdy base.

Cook Bacon

  • In a skillet over medium heat, I cook 4 slices of bacon until crispy, about 6–8 minutes. I drain on paper towels.

Prep Veggies

  • I slice 1 avocado and 1 tomato into thin slices. I chop 1 cup of romaine or spinach finely for a fresh crunch.

Spread Condiments

  • I spread 1 tbsp mayonnaise (and ½ tbsp Dijon mustard, if using) on each bagel half, ensuring even coverage.

Assemble Bagel

  • On the bottom half of each bagel, I layer chopped lettuce, tomato slices, avocado, and 2 bacon slices. I season with a pinch of salt and pepper, then top with the other bagel half, pressing lightly.

Serve

  • I serve the California BLT Chopped Bagel immediately, sliced in half for easy eating.
