  • 1/4 teaspoon salt

For the Cheesecake Layer:

  • 8 oz cream cheese softened
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract

For the Cherry Topping:

  • 1/2 cup canned cherry pie filling or homemade cherry compote

Instructions

Preheat and Prepare:

  • Preheat your oven to 350°F (175°C).
  • Line an 8x8-inch baking pan with parchment paper for easy removal.

Make the Brownie Batter:

  • In a microwave-safe bowl, melt the butter and chocolate chips together, stirring until smooth.
  • Mix in the sugar until well combined.
  • Add the eggs and vanilla extract, beating until the mixture is glossy.
  • Fold in the flour, cocoa powder, and salt until just combined. Do not overmix.

Prepare the Cheesecake Layer:

  • In a medium bowl, beat the softened cream cheese and sugar until smooth.
  • Add the egg and vanilla extract, mixing until fully incorporated.

Assemble the Layers:

  • Spread the brownie batter evenly in the prepared baking pan.
  • Gently spoon the cheesecake mixture over the brownie layer, spreading it evenly.
  • Add small dollops of cherry pie filling on top of the cheesecake layer.
  • Use a knife or skewer to swirl the layers together for a marbled effect.

Bake the Brownies:

  • Bake for 35-40 minutes, or until the edges are set and a toothpick inserted into the brownie portion comes out with a few moist crumbs.

Cool and Chill:

  • Allow the brownies to cool completely in the pan.
  • Refrigerate for at least 2 hours to firm up the layers before slicing into squares.
