Chocolate-Covered Strawberry Yogurt

Ingredients
  

  • 1 cup 150g fresh strawberries, diced
  • 1 cup 240g plain Greek yogurt (2% fat or higher)
  • 1 tsp 5ml vanilla extract
  • 1 cup 175g semi-sweet chocolate chips
  • 1 tsp 5g coconut oil

Instructions
 

Prep the Strawberries

  • I wash, dry, and hull 1 cup fresh strawberries, then dice them into small pieces (about ¼-inch) for easy mixing.

Mix the Yogurt Base

  • In a large bowl, I combine the diced strawberries with 1 cup Greek yogurt and 1 tsp vanilla extract. I stir gently until the berries are fully coated in creamy yogurt goodness.

Form the Clusters

  • I line a baking sheet with parchment paper and scoop 2-tbsp portions of the strawberry-yogurt mix onto it, forming 12 clusters. I pop the sheet in the freezer for 30–45 minutes to firm up.

Melt the Chocolate

  • In a small microwave-safe bowl, I melt 1 cup chocolate chips with 1 tsp coconut oil in 30-second bursts, stirring between each, until smooth (about 1–1.5 minutes). I let it cool for 5 minutes to avoid melting the yogurt.

Dip and Chill

  • I remove the frozen clusters and dip each into the melted chocolate using a spoon, coating fully. I place them back on the parchment-lined sheet and let the chocolate harden for 5–10 minutes in the fridge. Serve and enjoy!

Notes

  • You may find it helpful to work in batches – melting 2 batches of the chocolate and taking the clusters out of the freezer in batches as well. This will help to prevent the chocolate from hardening too quickly, as well as preventing the clusters from melting.
  • I find it helpful to melt the chocolate in a small, but deep bowl – this is easier to dip the clusters into.
