Ingredients
  

For the Cheesecake Filling:

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/4 cup sour cream

For the Dough and Coating:

  • 1 package refrigerated crescent roll dough (or homemade dough)
  • 1/2 cup granulated sugar (for coating)
  • 2 tsp ground cinnamon (for coating)

For Frying:

  • Vegetable oil (enough for deep frying)

Instructions
 

  • Prepare the Cheesecake Filling
    In a medium bowl, beat together the softened cream cheese, sugar, vanilla extract, and sour cream until smooth and creamy. Set aside.
  • Prepare the Dough
    Roll out the crescent roll dough and separate it into triangles. If using homemade dough, roll it out and cut it into small squares.
  • Fill and Seal
    Place 1 teaspoon of the cheesecake filling in the center of each dough piece. Fold the dough over the filling, pressing the edges to seal tightly. Roll each filled dough into a ball shape to ensure the filling stays enclosed during frying.
  • Make the Cinnamon-Sugar Coating
    In a small bowl, combine 1/2 cup granulated sugar and 2 teaspoons ground cinnamon. Set aside for coating the bites after frying.
  • Heat the Oil
    Pour vegetable oil into a deep skillet or pot, filling it about 2 inches deep. Heat the oil to 350°F (175°C). Use a kitchen thermometer to maintain the proper temperature.
  • Fry the Bites
    Carefully place a few cheesecake-filled dough balls into the hot oil. Fry in batches for 2-3 minutes per side, or until golden brown and crispy. Avoid overcrowding the pan to ensure even cooking.
  • Coat in Cinnamon Sugar
    Using a slotted spoon, remove the fried bites from the oil and place them on a paper towel-lined plate to drain excess oil. While still warm, roll each bite in the cinnamon-sugar mixture until fully coated.
