Ingredients

For the Cookie Dough:

  • cups 300 g all-purpose flour
  • ½ tsp baking powder
  • ½ tsp kosher salt
  • 1 cup 226 g unsalted vegan butter, softened
  • ¾ cup 150 g granulated sugar
  • 1 large flax egg 1 tbsp ground flaxseed + 3 tbsp water
  • 1 tsp vanilla extract
  • ½ tsp almond extract optional

For Decorations:

  • Gel food coloring orange, green, purple, black
  • Halloween-themed sprinkles or sanding sugar
  • Vegan royal icing or buttercream
  • Mini candies vegan chocolate chips, candy eyes

Instructions

Prep Dough

  • I mix 1 tbsp ground flaxseed with 3 tbsp water and let it thicken for 5 minutes. I beat 1 cup vegan butter and ¾ cup sugar until creamy, about 2 minutes. I add the flax egg, 1 tsp vanilla, and ½ tsp almond extract. In another bowl, I whisk 2½ cups flour, ½ tsp baking powder, and ½ tsp salt, then gradually mix into the wet ingredients until a dough forms for this festive cookies treat.

Color Dough

  • I divide the dough and knead in gel food coloring (orange, green, purple, black) for spooky designs in this easy recipe.

Chill Dough

  • I wrap the dough in plastic and chill for 30–60 minutes to firm it up for this cute Halloween treats dish.

Shape Cookies

  • I preheat the oven to 350°F (180°C) and line baking sheets with parchment. I roll dough to ¼-inch thick on a floured surface and cut into Halloween shapes (pumpkins, ghosts, bats). I chill shaped cookies for 10 minutes to prevent spreading for this festive cookies treat.

Bake

  • I bake for 8–10 minutes until edges are slightly golden, then cool completely on racks for this easy recipe.

Decorate

  • I pipe vegan royal icing or buttercream to create jack-o’-lanterns, spider webs, or mummies, and add sprinkles, candy eyes, or vegan chocolate drizzles for this Cookies Halloween.

Notes

  • Chilling dough helps maintain cookie shape.
  • Use gel food coloring for vibrant designs without thinning icing.
  • Let cookies cool completely before decorating to avoid melting the icing.
  • Store decorated cookies in a single layer or between parchment sheets.
  • Add spices like cinnamon or nutmeg for a cozy fall twist.
