For the Cookies:
- 1/2 cup unsalted butter softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup unsweetened cocoa powder
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
For the Ganache Topping:
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup heavy cream
Topping:
- 1/4 cup rainbow candy-coated chocolate sprinkles like mini M&Ms or rainbow chips
Make the cookie dough:
In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
Add the egg and vanilla extract, mixing until combined.
Sift in the cocoa powder, flour, baking soda, and salt. Mix until a soft dough forms.
Shape and bake:
Scoop 1 1/2-tablespoon portions of dough (or use a medium cookie scoop) and roll into balls. Place them on the prepared baking sheets, spacing about 2 inches apart.
Bake for 8-10 minutes, or until the edges are set. The centers may look slightly underdone—this is okay.
Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Make the ganache:
In a microwave-safe bowl, combine the chocolate chips and heavy cream. Microwave in 20-second intervals, stirring between each, until smooth and glossy.
- For extra fudginess, add 1/4 cup mini chocolate chips to the dough.
- Store cookies in an airtight container at room temperature for up to 3 days.
