Ingredients
  

  • 1 lb potato gnocchi
  • 2 cups cooked chicken shredded
  • 6 slices bacon cooked and crumbled
  • 1 tablespoon olive oil or butter
  • 3 cloves garlic minced
  • 1 8 oz block cream cheese, cubed and softened
  • 1 cup milk
  • 1/2 cup chicken broth
  • 1 packet ranch seasoning mix about 1 oz
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Chopped parsley or green onions for garnish optional

Instructions
 

  • Cook gnocchi according to package instructions, then drain and set aside.
  • In a large skillet, heat olive oil or butter over medium heat. Add garlic and sauté for 1-2 minutes until fragrant.
  • Add cream cheese, milk, and chicken broth to the skillet. Stir until the cream cheese is melted and the mixture is smooth.
  • Stir in ranch seasoning mix, then add shredded chicken and crumbled bacon.
  • Add cooked gnocchi and shredded cheddar cheese. Stir well to combine and heat through.
  • Season with salt and pepper to taste.
  • Garnish with chopped parsley or green onions before serving.

Notes

  • Use store-bought rotisserie chicken for quicker prep.
  • For a lighter version, substitute Greek yogurt for some of the cream cheese.
  • Add sautéed spinach or broccoli for extra vegetables.
  • This dish is best served fresh but can be stored in the refrigerator for up to 3 days.
