  • 1 cup pineapple juice for soaking

  • 1/2 cup coconut milk
  • Vegetable oil for frying

  • 4 oz. cream cheese softened (use vegan cream cheese for dairy-free)
  • 1/2 cup powdered sugar or agave syrup for a vegan option
  • 1 tsp vanilla extract
  • Extra coconut milk to adjust sauce consistency

Instructions
 

Soak the Pineapple Rings

  • Place pineapple rings in a bowl and cover with pineapple juice. Let them soak for at least 1 hour to enhance the sweetness. Drain and pat dry with paper towels to remove excess moisture.

Prepare the Coating

  • Set up a coating station with three shallow bowls: Bowl 1: All-purpose flour; Bowl 2: Whisked eggs and coconut milk; Bowl 3: Sweetened shredded coconut

Coat the Pineapple Rings

  • Dip each pineapple ring into the flour, followed by the egg mixture, and finally, press it into the shredded coconut to coat thoroughly.

Fry the Pineapple Rings

  • Heat vegetable oil in a deep pot to 350°F (175°C).
  • Fry the coated pineapple rings for about 1 minute on each side, or until golden brown.
  • Remove and drain on paper towels to absorb excess oil.

Make the Coconut Dipping Sauce
