Ingredients

  • 1 cup shredded zucchini drained well
  • 1 clove garlic grated fine
  • 1/3 cup
  • 1/4 cup grated Parmigiano-Reggiano cheese
  • 1 large egg
  • 2 tablespoons chopped fresh chives or 1 tablespoon dried chives
  • 1 tablespoon chopped fresh parsley or 1/2 tablespoon dried
  • 1 teaspoon chopped fresh basil or 1/2 teaspoon dried
  • 1 teaspoon chopped fresh oregano or 1/2 teaspoon dried
  • pinch of salt and pepper
  • Tomato sauce for dipping

Instructions

  • Grate and Drain the Zucchini: Use a box grater to shred the zucchini. Then, wrap it in a clean towel and squeeze out all the moisture. This step is essential for crispy bites.
  • Mix It All Together: In a large bowl, combine the shredded zucchini with garlic, parmesan, breadcrumbs, egg, and herbs. Season with salt and pepper, then mix until well combined.
  • Shape the Bites: Scoop out tablespoon-sized portions and roll them into balls. Place them on a parchment-lined baking sheet or lightly greased tray.
  • Bake Until Golden: Bake at 400°F (200°C) for 15–18 minutes, or until golden brown and slightly crispy on the outside.
  • Serve and Enjoy: Serve warm with your favorite dipping sauce—classic marinara, ranch, or even garlic aioli work beautifully.

Notes

To keep these Zucchini Garlic Bites fully aligned with your Keto recipe goals, here are a few easy swaps:
  • Breadcrumbs: Replace with almond flour, coconut flour, or crushed pork rinds
  • Cheese: Stick with hard cheeses like Parmesan or aged cheddar
  • Dipping Sauce: Choose sugar-free marinara or a keto garlic dip
