Ingredients
  

For the Cookies:

  • ½ cup 115g unsalted butter, softened
  • ¾ cup 150g granulated sugar
  • ¼ cup 50g dark brown sugar
  • 1 large egg room temperature
  • 2 tbsp 30ml concentrated apple juice
  • 1 tsp vanilla extract
  • 2 cups 240g all-purpose flour
  • ¾ tsp ground cinnamon
  • tsp ground nutmeg
  • ¼ tsp ground ginger
  • tsp ground allspice
  • ¾ tsp baking soda
  • ¼ tsp baking powder
  • ¼ tsp kosher salt

For the Frosting:

  • 5 oz 140g cream cheese, softened
  • 4 tbsp 60g unsalted butter, softened
  • ¾ cup 90g powdered sugar
  • 3 tbsp 45ml caramel sauce (store-bought or homemade)
  • 1 tsp vanilla extract

For the Streusel and Garnish:

  • ¼ cup 30g all-purpose flour
  • 1 tbsp 12g granulated sugar
  • ¼ tsp ground cinnamon
  • ¼ tsp kosher salt
  • 1 ½ tbsp 20g cold unsalted butter, cubed
  • 1 Granny Smith apple about 150g, diced into pea-sized pieces
  • Extra caramel sauce optional, for drizzle

Instructions
 

Make the Streusel Topping

  • In a medium skillet over medium heat, I melt 1 ½ tbsp cold butter. I stir in ¼ cup flour, 1 tbsp sugar, ¼ tsp cinnamon, and ¼ tsp salt until clumps form. I cook until golden and toasty, then transfer to a plate to cool for Crumbl Caramel Apple Cookies.

Prepare the Cookie Dough
