Ingredients
  

  • 2 large cucumbers thinly sliced
  • 1 small red onion thinly sliced
  • 1/4 cup fresh dill chopped
  • 1/4 cup fresh parsley chopped
  • 1 cup feta cheese crumbled
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions
 

  • In a large mixing bowl, combine the sliced cucumbers, red onion, dill, and parsley. Toss gently.
  • Add the crumbled feta cheese on top and fold it in carefully.
  • In a separate small bowl, whisk together olive oil, lemon juice, salt, and pepper until fully combined.
