Ingredients

  • 2 ½ cups (315g) all-purpose flour
  • 1 tsp salt
  • 2 tbsp granulated sugar
  • 1 packet (2 ¼ tsp) active dry yeast
  • ¾ cup warm milk
  • ½ cup unsalted butter, softened (plus extra for greasing)
  • Powdered sugar for dusting
  • Optional Fillings: Jam, Nutella, or custard

Instructions

Prepare the Dough

  • In a large bowl, combine warm milk and yeast. Let it sit for 5 minutes until foamy.
  • Add sugar, salt, and flour to the yeast mixture. Knead until the dough becomes smooth (about 8–10 minutes).
  • Cover with a clean towel and let it rise in a warm place for about an hour, or until it doubles in size.

Roll and Layer

  • Divide the dough into equal portions (8–10 pieces).
  • Roll each piece into a thin rectangle and spread softened butter evenly over the surface.
  • Roll each rectangle into a tight log and cut it lengthwise to reveal the layered structure.

Shape and Bake

  • Coil the cut dough halves into muffin tins, making sure to layer the exposed edges upwards to create the cruffin shape.
  • Preheat the oven to 375°F (190°C) and allow the cruffins to proof for another 30 minutes.
  • Bake for 20–25 minutes or until golden brown and crispy.

Add Fillings and Serve

  • Once cooled, fill the cruffins with your favorite filling using a piping bag, or enjoy them plain.
  • Dust with powdered sugar for an elegant finishing touch.

Notes

  • Make Ahead: The dough can be made the night before and stored in the refrigerator. Bring it to room temperature before shaping.
  • Storage: Store in an airtight container at room temperature for up to 2 days, or freeze for up to a month. Reheat in the oven for a fresh-from-the-oven taste.
  • Filling Ideas: Experiment with nutella, lemon curd, or savory options like pesto or sun-dried tomatoes.
