- 2 tbsp vegetable oil
- 3 cloves garlic minced
- 1 tbsp ginger grated
- 3 tbsp gochujang Korean chili paste
- 2 tbsp soy sauce
- 3 tbsp honey
- 2 tbsp rice vinegar
- 2 tbsp water
- 1 tsp sesame oil
- 1 tbsp sesame seeds for garnish
- 2 green onions thinly sliced, for garnish
Marinate Chicken
I season 1 ½ lbs chicken thighs with salt and pepper. In a bowl, I whisk 3 tbsp gochujang, 2 tbsp soy sauce, 3 tbsp honey, 2 tbsp rice vinegar, 2 tbsp water, 1 tsp sesame oil, 3 cloves minced garlic, and 1 tbsp grated ginger, reserving 2 tbsp sauce for this simple recipe.
Cook Chicken
I heat 2 tbsp vegetable oil in a skillet over medium-high heat, sear chicken 3–4 minutes per side until golden, then reduce heat, add sauce (except reserved), and simmer 5–7 minutes, turning to coat, for this gochujang-glazed chicken.
- Use chicken thighs for juiciness, but breasts work too with reduced cook time.
- Adjust gochujang amount to your preferred spice level.
- Add a splash of water if glaze thickens too much while cooking.
- Rest chicken a few minutes before slicing for best results.
