Ingredients
  

  • 1 cup 240g peanut butter (smooth or crunchy)
  • ½ cup 60g powdered sugar
  • 1 cup 100g graham cracker crumbs
  • ¼ cup 30g chopped nuts (peanuts, almonds, or pecans)
  • ¼ tsp vanilla extract
  • Pinch of salt
  • 2 cups 340g semi-sweet chocolate chips
  • 1 tbsp 15ml coconut oil
  • Substitution: Use almond butter for peanut butter; maple syrup for powdered sugar.

Instructions
 

Mix Peanut Butter Base

  • I combine 1 cup peanut butter, ½ cup powdered sugar, 1 cup graham cracker crumbs, ¼ cup chopped nuts, ¼ tsp vanilla, and a pinch of salt in a bowl until dough-like for these Donkey Balls.

Roll Balls

  • I roll tablespoon-sized portions into balls, placing them on a parchment-lined baking sheet for these crunchy peanut butter balls.

Chill Balls

  • I freeze the balls for 20–30 minutes to firm up for these no-bake chocolate treats.

Melt Chocolate

  • I melt 2 cups chocolate chips with 1 tbsp coconut oil in a microwave (30-second bursts, stirring) or double boiler for this simple recipe.

Dip in Chocolate

  • I dip chilled balls in melted chocolate using a fork, letting excess drip off, and place back on the parchment for these sweet peanut butter bites.

Set Chocolate

  • I refrigerate the coated balls for 30 minutes (or freeze for 15 minutes) until set for these no-bake chocolate treats.
