Ingredients

  • 1 cup sugar
  • 2 cups fresh dragon fruit peeled
  • 1 cup freshly squeezed lemon juice
  • 3 cups cold water

  • Make the Simple Syrup: In a saucepan, combine 1 cup of water and 1 cup of granulated sugar. Heat gently over medium heat, stirring until the sugar fully dissolves. Set aside to cool.
  • Juice the Lemons: Slice lemons in half, remove the seeds, and juice them. You'll need about 1 cup of fresh lemon juice, which usually takes 4–6 lemons depending on size.
  • Prep the Dragon Fruit: Cut the ends off the dragon fruit and slice off the peel, leaving a little bit of the pink outer skin if desired for extra color. Dice the flesh and blend it with 1 tablespoon of water until smooth. Pulse lightly if you want to keep some texture.
  • 4: Combine Everything: In your blender, add the dragon fruit puree, lemon juice, and cooled simple syrup. Pour in 2–3 cups of cold water, adjusting to taste. Blend briefly to combine, especially if you want a smoother texture.
  • 5: Serve and Garnish: Pour over ice into glasses and garnish with fresh mint, lemon slices, and diced dragon fruit for an Instagram-worthy presentation.
