Ingredients
  

  • 3 cups 720g fresh peaches, peeled and finely chopped
  • ½ cup 120g red bell pepper, finely chopped
  • ½ cup 120g green bell pepper, finely chopped
  • 1 –2 jalapeños seeded and finely diced
  • ¼ cup 60ml apple cider vinegar
  • 1 box 1.75 oz/49g powdered fruit pectin
  • 5 cups 1000g granulated sugar
  • Substitution: Use mango for peaches; dried chili flakes for jalapeños.

Instructions
 

Prepare Jars

  • I sterilize 4–5 half-pint jars, lids, and rings by boiling or using a dishwasher, keeping them warm for this Easy Peach Pepper Jelly.

Cook Fruit Mixture

  • In a large pot, I combine 3 cups peaches, ½ cup each bell peppers, 1–2 jalapeños, and ¼ cup vinegar, simmering gently for this vibrant peach jelly.

Add Pectin

  • I stir in 1.75 oz pectin, bring to a full boil, and cook for 1 minute for this spicy fruit spread.

Add Sugar

  • I add 5 cups sugar, stirring constantly, and boil 1–2 minutes until fully dissolved for this simple recipe.

Jar and Process

  • I ladle jelly into jars, leaving ¼-inch headspace, wipe rims, secure lids, and process in a water bath for 10 minutes, then cool 12–24 hours for this sweet-spicy condiment.

Notes

  • Adjust jalapeños for more or less heat to suit your taste.
  • For extra spice, keep some jalapeño seeds or add red pepper flakes.
  • Perfect served over cream cheese, with grilled meats, or on biscuits and toast.
