Ingredients
  

  • 2 flour tortillas
  • 2 large eggs
  • 1 cup shredded cheese cheddar or mozzarella
  • 1 avocado sliced
  • 1 tablespoon butter for frying
  • Salt and pepper to taste

Instructions
 

  • Heat the Skillet: Place a non-stick skillet over medium heat and add the butter.
  • Fry the Eggs: Crack one egg into the skillet, season with salt and pepper, and cook until the white is set but the yolk remains runny. Remove and repeat with the second egg.
  • Assemble the Quesadilla: In the same skillet, place one tortilla and sprinkle half of the shredded cheese over it.
  • Add the Filling: Place the fried eggs on top of the cheese and add the avocado slices.
  • Top and Cook: Sprinkle the remaining cheese over the avocado, place the second tortilla on top, and cook for 2-3 minutes on each side until golden brown and the cheese is melted.
  • Serve: Remove from the skillet, slice into wedges, and enjoy hot.
