- 2 flour tortillas
- 2 large eggs
- 1 cup shredded cheese cheddar or mozzarella
- 1 avocado sliced
- 1 tablespoon butter for frying
- Salt and pepper to taste
Heat the Skillet: Place a non-stick skillet over medium heat and add the butter.
Fry the Eggs: Crack one egg into the skillet, season with salt and pepper, and cook until the white is set but the yolk remains runny. Remove and repeat with the second egg.
Assemble the Quesadilla: In the same skillet, place one tortilla and sprinkle half of the shredded cheese over it.
Add the Filling: Place the fried eggs on top of the cheese and add the avocado slices.
Top and Cook: Sprinkle the remaining cheese over the avocado, place the second tortilla on top, and cook for 2-3 minutes on each side until golden brown and the cheese is melted.
Serve: Remove from the skillet, slice into wedges, and enjoy hot.
-
Use Fresh Tortillas: Opt for fresh tortillas for better flavor and texture.
-
Cook Eggs to Preference: Fry eggs to your desired doneness—runny yolks for a rich, creamy center.
-
Cheese Choice Matters: Use cheeses that melt well, like cheddar, Monterey Jack, or a Mexican blend.
-
Avoid Overstuffing: Keep the filling balanced to prevent the quesadilla from falling apart.
-
Medium Heat is Key: Cook on medium heat for a crispy exterior and gooey interior.
