Ingredients
  

  • 2 cups Broccoli florets
  • 2 cups Cauliflower florets
  • 2 cups Carrots sliced
  • 1 medium Red bell pepper chopped
  • 1 medium Yellow bell pepper chopped
  • 4 tablespoons Olive oil
  • 4 cloves Garlic minced
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried thyme
  • 1/4 cup Fresh parsley chopped (for garnish)

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • Wash and chop the broccoli, cauliflower, carrots, and bell peppers.
  • In a bowl, combine vegetables, olive oil, garlic, salt, pepper, oregano, and thyme. Toss to coat.
  • Spread vegetables on a baking sheet, roast for 25-30 minutes at 425°F (220°C).
  • Garnish with parsley before serving.

  • Make sure to cut vegetables into similar sizes for even cooking.
  • You can add other vegetables like zucchini or asparagus if desired.
