- 2 cups Broccoli florets
- 2 cups Cauliflower florets
- 2 cups Carrots sliced
- 1 medium Red bell pepper chopped
- 1 medium Yellow bell pepper chopped
- 4 tablespoons Olive oil
- 4 cloves Garlic minced
- Salt to taste
- Pepper to taste
- 1 teaspoon Dried oregano
- 1 teaspoon Dried thyme
- 1/4 cup Fresh parsley chopped (for garnish)
Preheat your oven to 425°F (220°C).
Wash and chop the broccoli, cauliflower, carrots, and bell peppers.
