Ingredients
  

  • 4 ripe nectarines halved and pitted
  • 8 slices of prosciutto
  • 8 oz burrata cheese
  • 4 cups arugula
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic glaze
  • 1/4 cup toasted pine nuts
  • Salt and freshly cracked black pepper to taste
  • Fresh basil leaves for garnish

Instructions
 

  • Preheat a grill or grill pan over medium heat. Lightly brush the nectarine halves with 1 tablespoon of olive oil.
  • Place the nectarines on the grill, cut-side down. Grill for 2-3 minutes, or until grill marks appear. Flip and cook for an additional 2 minutes. Remove from heat and let cool slightly.
  • Arrange arugula on a serving platter or individual plates.
  • Tear the burrata into pieces and place it over the arugula.
  • Drape slices of prosciutto over the salad.
  • Slice the grilled nectarines and add them to the platter.
  • Drizzle with balsamic glaze and the remaining olive oil.
  • Sprinkle toasted pine nuts, salt, and freshly cracked black pepper over the salad. Garnish with fresh basil leaves.
  • Serve immediately and enjoy the harmonious flavors of sweet, salty, and creamy in every bite.
