For the Cookie Layer:

  • ½ cup 115g unsalted butter, softened
  • ½ cup 100g brown sugar
  • ¼ cup 50g granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 ¼ cups 150g all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup 90g chocolate chips
  • Halloween sprinkles candy eyeballs, orange/green food coloring (optional)

Instructions

Preheat Oven

  • I preheat the oven to 350°F (175°C) and line an 8x8-inch pan with parchment paper for these festive brookie bars.

Make Brownie Layer

  • I whisk ½ cup melted butter and 1 cup sugar in a bowl, add 2 eggs one at a time, then stir in ⅓ cup cocoa powder. I mix in ½ cup flour, ¼ tsp salt, and ¼ tsp baking powder until just combined, spreading evenly in the pan for this spooky cookie brownies.

Prepare Cookie Layer

  • I cream ½ cup softened butter, ½ cup brown sugar, and ¼ cup granulated sugar until fluffy. I add 1 egg and 1 tsp vanilla, mixing well. I stir in 1 ¼ cups flour, ½ tsp baking soda, ¼ tsp salt, ½ cup chocolate chips, and optional food coloring or sprinkles for this simple recipe.

Assemble Brookies

  • I spoon cookie dough in dollops over the brownie layer, gently pressing to spread evenly for this chewy Halloween dessert.

Bake and Decorate

  • I bake for 25–30 minutes until a toothpick shows moist crumbs. I add candy eyeballs or sprinkles while warm, then cool completely before cutting into squares for these Halloween Brookies.

Notes

  • Use parchment paper for easy removal and cleanup.
  • Don’t overbake—brookies should be soft and slightly gooey.
  • Let cool completely before slicing for neat squares.
  • Add Halloween-themed toppings for extra fun.
  • You can prepare the batters ahead and refrigerate overnight.
