Ingredients

Shells:

  • 1 cup 100g almond flour
  • 1 ¾ cups 210g powdered sugar
  • 3 large egg whites ~90g
  • ¼ cup 50g granulated sugar
  • Orange purple, or black gel food coloring

Buttercream Filling:

  • ½ cup 115g unsalted butter, softened
  • 1 ½ cups 180g powdered sugar
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon optional
  • 1 tbsp 15ml milk

Decorations: White icing, black edible marker, candy eyeballs

Instructions

Prepare Ingredients

  • I sift 1 cup almond flour and 1 ¾ cups powdered sugar together for this festive macarons’ smooth shells.

Make Meringue

  • I beat 3 egg whites until foamy, add ¼ cup granulated sugar gradually, and whip to stiff peaks with gel coloring for this Halloween Macarons Recipe.

Fold Batter

  • I fold dry ingredients into meringue in thirds, mixing until it flows like lava for this chewy Halloween dessert.

Pipe Shells

  • I pipe 1-inch circles onto parchment-lined sheets, tap to remove bubbles, and rest 30 minutes until a skin forms for this simple recipe.

Bake Shells

  • I bake at 300°F (150°C) for 17 minutes until shells lift cleanly, then cool completely for this spooky sweet treat.

Make Buttercream

  • I beat ½ cup butter, 1 ½ cups powdered sugar, 1 tsp vanilla, ½ tsp cinnamon, and 1 tbsp milk until creamy for this festive macarons.

Assemble and Decorate

  • I pipe buttercream on half the shells, sandwich, and decorate with white icing stripes, edible marker faces, or candy eyes for this chewy Halloween dessert.

Notes

For variety, you can replace the buttercream filling with chocolate ganache or cream cheese frosting. Use edible markers or small piping tips with colored icing to decorate the cooled macarons with pumpkins, spider webs, ghosts, or monster eyes.
