This hard boiled egg and avocado bowl combines hard boiled eggs with creamy avocado and fresh veggies for a super healthy and quick low-carb meal that's loaded with protein, healthy fat and fiber.
▢1 heaping Tablespoon red bell pepperfinely chopped

Instructions
Boil the Eggs
I boil 4 eggs in a small pot of water for 10–12 minutes, then transfer to an ice bath to cool. I peel and chop them coarsely for Healthy Egg Salad.
Prep the Veggies and Avocado
I dice 1 ripe avocado, finely chop ¼ cup red onion, and slice ½ cup red bell pepper into thin strips.
Assemble the Bowl
In a mixing bowl, I combine the chopped eggs, avocado, red onion, and red bell pepper. I drizzle 1 tbsp olive oil and 1 tbsp white balsamic vinegar over the mixture, then sprinkle with ½ tsp sea salt, ¼ tsp black pepper, and ¼ tsp crushed red pepper (if using). I toss gently to coat for Hard Boiled Egg and Avocado Bowl.
Serve
I serve immediately in bowls for maximum freshness, garnishing with extra pepper if desired.
