- 2 cups cooked chicken breast shredded
- 1/2 cup plain Greek yogurt
- 1 tablespoon olive oil
- 1 tablespoon Dijon mustard
- 1 celery stalk diced
- 1/4 cup red onion finely chopped
- 1/4 cup chopped fresh parsley
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Optional: 1/4 cup chopped walnuts or sliced almonds
- Optional: 1/4 cup dried cranberries
In a large bowl, combine the shredded chicken, celery, red onion, and parsley.
In a separate small bowl, whisk together the Greek yogurt, olive oil, Dijon mustard, and lemon juice.
Pour the dressing over the chicken mixture and stir until well combined.
Season with salt and pepper to taste.
If using, fold in chopped nuts and dried cranberries.
