Ingredients
  

  • 2 cups cooked chicken breast shredded
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon olive oil
  • 1 tablespoon Dijon mustard
  • 1 celery stalk diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Optional: 1/4 cup chopped walnuts or sliced almonds
  • Optional: 1/4 cup dried cranberries

Instructions
 

  • In a large bowl, combine the shredded chicken, celery, red onion, and parsley.
  • In a separate small bowl, whisk together the Greek yogurt, olive oil, Dijon mustard, and lemon juice.
  • Pour the dressing over the chicken mixture and stir until well combined.
  • Season with salt and pepper to taste.
  • If using, fold in chopped nuts and dried cranberries.
  • Refrigerate for at least 30 minutes before serving for best flavor.

Notes

  • This salad can be served on its own, in a sandwich, or over a bed of greens.
  • For added crunch, serve with whole grain crackers or lettuce wraps.
  • Adjust ingredients to taste or dietary preferences.
