  • cup 40g unflavored protein powder (or vanilla)
  • 2 tsp ground cinnamon

Wet Ingredients:

  • 2 medium ripe bananas mashed
  • 2 large eggs
  • 1 cup 240ml milk (dairy or soy for higher protein)
  • ¼ cup 60ml maple syrup
  • 2 tsp vanilla extract

Add-Ins:

  • cup 50g hemp seeds
  • cup 60g semi-sweet chocolate chips, plus extra for topping

For Serving (Optional):

  • Sliced bananas
  • Yogurt nut butter, or extra maple syrup

Instructions
 

Preheat and Prep

  • I preheat the oven to 350°F (175°C). I line a 9x13-inch baking pan with parchment paper for easy removal and cleanup.

Mix Dry Ingredients

  • In a large bowl, I stir together 2 cups rolled oats, ⅓ cup protein powder, and 2 tsp cinnamon until well combined for this banana oatmeal bake.

Mix Wet Ingredients

  • In a medium bowl, I whisk 2 mashed bananas, 2 eggs, 1 cup milk, ¼ cup maple syrup, and 2 tsp vanilla extract until smooth, creating a sweet base for this healthy baked oats.

Combine and Add-Ins

  • I pour the wet ingredients into the dry, stirring well to combine. I fold in ⅓ cup hemp seeds and ⅓ cup chocolate chips for a nutty, indulgent protein-packed oatmeal.

Bake

  • I transfer the mixture to the prepared pan, spreading it evenly. I sprinkle extra chocolate chips and banana slices on top if desired. I bake for 30 minutes, until golden brown. I cool for 20 minutes before cutting into 6 servings.
