Ingredients
  

  • 2 pounds salmon cut into 1 inch strips or chunks
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • salt and black pepper
  • 3 tablespoons grated parmesan or flour
  • olive oil or melted butter

Hot Honey

  • 1/2 cup honey
  • 2-3 tablespoons hot sauce
  • 1/2 – 3 teaspoons cayenne pepper use to your taste, starting with 1/2 teaspoon
  • 3/4 teaspoon chipotle chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • green onions cilantro, or thyme, for serving

Instructions
 

Prep and Season the Salmon

  • Cut your salmon into small bites or strips. Pat them dry and toss gently with: Onion powder, Garlic powder, Smoked paprika, Grated Parmesan.
  • Then drizzle with melted butter or olive oil and spread evenly on a parchment-lined baking sheet.
  • Don’t overcrowd the pan—leave space so the salmon roasts and crisps up rather than steams.

Roast to Perfection

  • Bake the salmon at 400°F (200°C) for 12–15 minutes until it’s golden and flakes easily with a fork. The Parmesan creates a beautiful crispy edge that mimics the crunch of fried tenders.

Make the Hot Honey Sauce

  • While the salmon bakes, gently warm the honey in a small pot over low heat. Add: Cayenne pepper (to taste), Chipotle chili powder, Garlic & onion powder, A pinch of flaky sea salt.
  • Stir occasionally, but don’t let the honey boil—it should stay pourable and glossy. Adjust the cayenne to your desired spice level.

Glaze and Serve

  • Once the salmon bites are done, drizzle or brush the hot honey sauce over the warm fish. The heat will help the glaze cling perfectly.
  • Top with a pinch of flaky sea salt and optional garnishes like: Chopped green onions, Fresh cilantro, A squeeze of lemon, Creamy lemon aioli on the side for dipping.
