Ingredients
  

  • 1 lb Italian sausage mild or spicy, based on preference
  • 4 cups potatoes peeled and diced
  • 1 onion finely chopped
  • 3 cloves garlic minced
  • 2 carrots diced
  • 2 celery stalks chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded Parmesan cheese optional for garnish
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Cook the Italian Sausage: Heat a large pot or Dutch oven over medium heat. Add the Italian sausage, breaking it up with a spoon as it cooks. Cook until browned and fully cooked through. Remove the sausage and set it aside, leaving a bit of the grease for added flavor.
  • Sauté the Vegetables: In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté for 5-7 minutes until the vegetables are softened and fragrant.
  • Add Potatoes and Broth: Stir in the diced potatoes, chicken broth, oregano, paprika, salt, and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes, or until the potatoes are tender.
  • Stir in the Cream: Once the potatoes are cooked through, return the browned Italian sausage to the pot and stir in the heavy cream. Simmer for an additional 5 minutes to allow the flavors to meld.
  • Serve and Enjoy: Ladle the Italian sausage and potato soup into bowls. Garnish with shredded Parmesan cheese and fresh parsley for added flavor. Serve hot with crusty bread or a side salad.
