- 12 fresh jalapenos halved lengthwise with seeds and membranes removed.
- 12 strips of bacon – one for each popper.
- 8 ounces Cream Cheese softened for easy mixing.
- 1 cup Cheddar Cheese shredded (use mild or sharp for your preferred flavor).
- 1 clove Garlic minced.
- 2 tablespoons Green Onions finely chopped.
- Salt and Pepper To taste.
Preheat Oven: Set your oven to 375°F (190°C) and line a baking sheet with parchment paper or foil for easy cleanup.
Prepare Jalapenos: Wearing kitchen gloves, slice the jalapenos lengthwise and remove the seeds and membranes. If you prefer extra heat, leave some seeds intact.
Make the Filling: In a bowl, combine softened cream cheese, shredded cheddar cheese, minced garlic, green onions, salt, and pepper. Mix until smooth and well combined.
Stuff the Jalapenos: Fill each jalapeno half with the cream cheese mixture, smoothing the top so it sits evenly.
Wrap with Bacon: Carefully wrap each stuffed jalapeno with a strip of bacon. Secure with toothpicks if needed to hold the bacon in place.
Bake: Arrange the bacon-wrapped jalapenos on the prepared baking sheet. Bake for 20-25 minutes until the bacon is crispy and the filling is bubbly.
Cool & Serve: Let the poppers cool slightly before serving. Enjoy them warm or at room temperature.
