- 1 cup 100g shredded cheddar cheese
- 2 fresh jalapenos roasted, seeded, and finely chopped
- 4 slices bacon cooked and crumbled

- ½ tsp onion powder

- 4 tbsp 60g unsalted butter, softened

Roast the Jalapenos
I preheat the oven to 400°F (200°C). I place 2 jalapenos on a baking sheet and roast for 15 minutes, turning halfway, until charred. I let them cool, peel, seed, and finely chop them for a smoky kick in this cheesy jalapeno sandwich.
Mix the Filling
In a medium bowl, I combine 4 oz softened cream cheese, 1 cup shredded cheddar, chopped roasted jalapenos, 4 crumbled bacon slices, ½ tsp garlic powder, ½ tsp onion powder, and a pinch of salt. I mix until smooth, creating a creamy filling for these spicy cheese melts.
Assemble the Sandwiches
I spread 1 tbsp butter on one side of each of the 8 bread slices. On the unbuttered side of 4 slices, I spread 2–3 tbsp of the filling and sprinkle ¼ cup shredded cheddar. I top with another bread slice, buttered side up, for a perfect zesty grilled cheese.
Cook the Sandwiches
I heat a large skillet or griddle over medium heat. I cook each sandwich for 3–4 minutes per side, pressing gently with a spatula, until golden and the cheese is melty, ensuring a gooey cheesy jalapeno sandwich.

I slice the sandwiches diagonally and garnish with chopped green onions or cilantro, if desired. I serve warm, enjoying the spicy, creamy goodness of these spicy cheese melts.
