Ingredients

For the Meat Layer:

  • 2 large eggs
  • 2 ½ tsp unflavored gelatin optional
  • 2 pounds meatloaf mix or ground beef
  • ½ cup almond flour
  • ½ cup finely grated parmesan cheese
  • 1 ½ tsp sea salt
  • ½ tsp black pepper

For the Filling:

  • 8 oz cream cheese softened
  • 1 cup shredded cheddar cheese
  • 4 jalapeños seeded and diced
  • 2 tbsp minced onion
  • 1 tsp garlic powder
  • ½ tsp smoked paprika

For the Topping:

  • 8 oz bacon enough to cover loaf

Instructions

Preheat Oven

  • I preheat the oven to 400°F and line a baking sheet with parchment paper for this cheesy stuffed meatloaf.

Mix Meat Layer

  • I beat 2 eggs in a large bowl, whisk in 2 ½ tsp gelatin, and let sit for 5 minutes. I add 2 pounds ground beef, ½ cup almond flour, ½ cup parmesan, 1 ½ tsp salt, and ½ tsp pepper, mixing by hand until combined for this spicy comfort loaf.

Prepare Filling

  • I mix 8 oz softened cream cheese, 1 cup cheddar, 4 diced jalapeños, 2 tbsp onion, 1 tsp garlic powder, and ½ tsp paprika in a bowl until smooth for this simple recipe.

Shape Meatloaf

  • I form ⅓ of the meat mixture into a rectangle on the baking sheet, spread the filling evenly (leaving a ½-inch border), and cover with remaining meat, sealing edges tightly for this cheesy stuffed meatloaf.

Add Bacon Topping

  • I wrap the loaf with 8 oz bacon slices, overlapping as needed, for this bold dinner.

Bake and Broil

  • I bake for 45 minutes, then broil for 3–5 minutes until bacon is crispy for this Jalapeño Popper Meatloaf.

Rest and Serve

  • I let the loaf rest for 15 minutes before slicing to set the filling for this spicy comfort loaf.

Notes

  • Use room-temp cream cheese for a smooth filling.
  • Shred your own cheddar for best melting.
  • Don’t overmix the meat to keep it tender.
  • Broil bacon for extra crispness, but watch closely.
  • Rest before slicing to help the filling set and keep slices neat.
