Ingredients
  

  • 3/4 cup unsalted butter, softened.
  • 1 cup granulated sugar.
  • 1 egg.
  • 2 1/2 cups all-purpose flour.
  • 1 tsp baking powder.
  • 1/4 tsp salt.
  • 2 packages (3 oz each) Jello (choose your favorite flavors/colors).

Instructions
 

  • Preheat the Oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper for easy cleanup.
  • Cream Butter and Sugar: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg and mix until well combined.
  • Prepare the Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  • Mix and Divide Dough: Gradually add the dry ingredients to the wet mixture and stir until fully combined. Divide the dough into separate portions, depending on how many Jello flavors you want to use.
  • Add Jello Flavors: Mix 2-3 tablespoons of Jello powder into each portion of dough. Stir thoroughly until the color and flavor are evenly distributed. For bolder colors, add more Jello powder.
  • Shape the Cookies: Roll the dough into 1-inch balls and place them on the prepared baking sheets. Use the bottom of a glass to gently flatten each ball.
  • Bake the Cookies: Bake in the preheated oven for 8-10 minutes, or until the edges are set but the centers remain soft. Be careful not to overbake for the best chewy texture.
  • Cool and Serve: Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely. Serve and enjoy!
