Ingredients

  • 1 can 15 oz sliced peaches, drained and chopped
  • 1 can 8 oz crushed pineapple, drained
  • 1 package 3.4 oz instant vanilla pudding mix
  • 1 container 8 oz whipped topping (e.g., Cool Whip)
  • 1 cup mini marshmallows
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans
  • ½ cup sour cream
  • ½ tsp vanilla extract

Instructions

Prep Fruit

  • I drain 1 can (15 oz) sliced peaches and 1 can (8 oz) crushed pineapple thoroughly, letting them sit in a strainer for 5 minutes. I chop the peaches into bite-sized pieces.

Mix Pudding Base

  • In a large bowl, I whisk 1 package (3.4 oz) instant vanilla pudding mix with 1 container (8 oz) whipped topping until smooth and creamy.

Add Sour Cream

  • I gently fold in ½ cup sour cream to the pudding mixture, ensuring an even, velvety texture.

Combine Ingredients

  • I add the chopped peaches, drained pineapple, 1 cup mini marshmallows, 1 cup shredded coconut, and 1 cup chopped pecans to the pudding base. I stir in ½ tsp vanilla extract and mix gently until combined.

Chill

  • I cover the Millionaire Peach Salad and refrigerate for at least 2 hours, preferably overnight, to let flavors meld and texture firm up.

Serve

  • I serve the Millionaire Peach Salad chilled, garnished with extra pecans or coconut if desired.
