For the Casserole:
- 1 lb 450g ground chicken
- 1 cup 200g uncooked brown rice
- 1 medium onion diced
- 2 cloves garlic minced
- 1 red bell pepper chopped
- 1 zucchini chopped
- 1 can 14 oz / 400g diced tomatoes, with juice
- 2 cups 480ml low-sodium chicken broth
- 1 tsp chili powder optional
- 1 tsp dried oregano
- Salt and pepper to taste
- ½ cup 50g shredded cheddar or mozzarella cheese (optional)
For Serving (Optional):
- Fresh parsley or green onions chopped
Prep and Cook the Chicken
I preheat the oven to 375°F (190°C). In a large oven-safe skillet over medium heat, I cook 1 lb ground chicken, breaking it apart with a wooden spoon, for 5–7 minutes until no longer pink. I add diced onion, 2 minced garlic cloves, 1 tsp chili powder, 1 tsp oregano, salt, and pepper, cooking for 2 more minutes until fragrant.
Add Veggies and Rice
I stir in 1 chopped red bell pepper, 1 chopped zucchini, 1 cup uncooked brown rice, 1 can diced tomatoes with juice, and 2 cups chicken broth, mixing well to combine for this easy chicken casserole.
Bake the Casserole
I cover the skillet with foil and bake for 30–35 minutes, until the rice is tender and liquid is absorbed. If using cheese, I sprinkle ½ cup cheddar or mozzarella on top during the last 5 minutes and let it melt.
