Ingredients

  • 8 oz 225 g semi-sweet baking chocolate
  • ½ cup 115 g unsalted butter
  • 2 large eggs room temperature
  • ¾ cup 150 g granulated sugar
  • ½ cup 100 g dark brown sugar
  • 1 tsp vanilla extract
  • ¾ cup 95 g all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup 85 g semi-sweet chocolate chips
  • 10 Oreo cookies coarsely crushed, plus extra for topping

Instructions

Prep Workspace

  • I gather all ingredients and line a baking sheet with parchment paper to prevent sticking for this easy recipe.

Melt Chocolate and Butter

  • In a medium heatproof bowl, I melt 8 oz semi-sweet chocolate and ½ cup butter using a double boiler or microwave in 30-second bursts, stirring until smooth. I let it cool slightly for this chocolatey cookie treat.

Mix Eggs and Sugars

  • In a large bowl, I beat 2 eggs, ¾ cup granulated sugar, and ½ cup brown sugar with an electric mixer for 2–3 minutes until pale and fluffy for these decadent cookies.

Combine Ingredients

  • I pour the melted chocolate mixture into the egg mixture, whisking until combined. I fold in ¾ cup flour, ½ tsp baking powder, ¼ tsp salt, ½ cup chocolate chips, and 10 crushed Oreos with a spatula until a thick dough forms for this easy recipe.

Form and Chill Cookies

  • I scoop dough onto the baking sheet, spacing 2 inches apart. I chill the tray in the freezer for 10 minutes to prevent spreading for these chewy treats.

Bake Cookies

  • I preheat the oven to 350°F (180°C). I bake for 12–14 minutes until tops crack and edges are crisp for this chocolatey cookie treat.

Cool Cookies

  • I use a round cookie cutter to reshape the warm cookies, then cool on the tray for 10 minutes before transferring to a rack for this Oreo Brownie Cookies treat.

Notes

  • Make sure the eggs are at room temperature for better incorporation.
  • Using a double boiler will help prevent the chocolate from burning.
  • Chilling the dough is optional, but recommended for better cookie shape.
  • Feel free to add additional toppings like nuts or more chocolate chips if desired.
