  • ¾ lb cod fillets or halibut, tilapia, or sea bass
  • 1 tbsp olive oil or melted butter

For the Crust:

  • ¼ cup mayonnaise
  • 1 tbsp lemon juice
  • Pinch of salt and freshly ground black pepper
  • ¼ tsp dried dill
  • ¼ tsp Old Bay seasoning
  • 1 tbsp grated Parmesan cheese
  • 2 tbsp panko breadcrumbs

Instructions
 

  • Preheat and Prep: Preheat oven to 400°F. Lightly spray a baking dish with non-stick cooking spray.
  • Prepare the Fish: Pat ¾ lb cod fillets dry and place in the baking dish. Brush lightly with 1 tbsp olive oil or melted butter.
  • Make the Crust: In a small bowl, mix ¼ cup mayonnaise, 1 tbsp lemon juice, a pinch of salt, black pepper, ¼ tsp dried dill, ¼ tsp Old Bay seasoning, and 1 tbsp grated Parmesan to form a paste.
  • Coat the Cod: Spread half the mayonnaise mixture evenly over each cod fillet. Sprinkle 1 tbsp panko breadcrumbs on top of each, pressing gently to adhere.
  • Bake: Bake for 10 minutes, or until the fish is opaque and just beginning to flake. Turn on the broiler and broil for 1-2 minutes, until the panko is golden and the topping slightly puffed.
