Ingredients
  

  • 3 cups watermelon cubed
  • 2 ripe peaches sliced
  • ¼ red onion thinly sliced
  • ½ cup crumbled feta cheese
  • ¼ cup fresh mint leaves torn
  • 1 tbsp balsamic glaze
  • 1 tbsp extra-virgin olive oil
  • Juice of ½ lime
  • Sea salt and black pepper to taste

Instructions
 

Combine Fruit

  • In a large bowl, I gently mix 3 cups cubed watermelon and 2 sliced peaches for a juicy base.

Add Onion

  • I add ¼ cup thinly sliced red onion, tossing lightly to distribute its mild bite.

Incorporate Feta and Mint

  • I sprinkle in ½ cup crumbled feta cheese and ¼ cup torn fresh mint leaves for creamy and herby notes.

Dress Salad

  • I drizzle the Peach Watermelon Salad with 1 tbsp balsamic glaze, 1 tbsp olive oil, and juice of ½ lime. I season with a pinch of sea salt and black pepper.

Chill and Serve
