Instructions
Cook the Beef
I heat a large cast iron skillet over medium-high heat, add 1 lb ground beef, and cook until a deep brown crust forms on the bottom, about 4–5 minutes. I break it apart and cook until 50% of the beef is crusted, about 2–3 more minutes, then remove it, leaving the fat in the skillet.
Sauté the Veggies
I add 2 tbsp butter to the skillet with the beef fat, then toss in 1 diced onion, 1 diced green bell pepper, and 8 oz minced mushrooms. I let them brown for 1–2 minutes without stirring, stir, then brown for another 1–2 minutes for caramelized flavor.
Make the Sauce
In a small bowl, I whisk 1 cup beef broth with 1 tbsp cornstarch until smooth. I return the beef to the skillet, add the broth mixture, 2 tbsp ketchup, 1 tbsp Worcestershire sauce, ½ tsp salt, and ½ tsp pepper, stirring to combine.
Simmer and Thicken
I cook the mixture over medium heat for 3–5 minutes until thickened and hearty, stirring occasionally to avoid a soupy texture.
Add Cheese
I turn off the heat and stir in 8 oz chopped provolone until melted and gooey, coating the beef and veggies.
Serve
I toast 6 brioche buns (optional) and pile the Philly Cheese Steak Sloppy Joes mixture high for a messy, delicious sandwich.
