- 1 3.4 oz box instant vanilla pudding mix
- 1 cup mini marshmallows
- 1/2 cup shredded sweetened coconut optional
- 1/2 cup chopped pecans or walnuts optional
- 1 8 oz tub whipped topping (like Cool Whip), thawed
- Optional: maraschino cherries or extra chopped nuts for garnish
In a large mixing bowl, combine the entire can of crushed pineapple (with juice) and dry pudding mix. Stir until well blended.
Let sit for 3–5 minutes to thicken slightly.
Fold in marshmallows, coconut (if using), and chopped nuts.
Gently fold in the whipped topping until fully combined and fluffy.
Cover and chill for at least 1 hour before serving.
