For the Cake:
- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- ½ cup unsalted butter softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup sour cream
- 1 cup crushed pineapple well drained
For the Pineapple Glaze:
- ½ cup powdered sugar
- 2 tbsp pineapple juice
Prep the Oven & Pan: Preheat your oven to 350°F (175°C). Grease and flour a standard loaf pan or line it with parchment paper.
Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, and salt. Set aside.
Cream Butter & Sugar: In a large mixing bowl, beat the softened butter and sugar until light and fluffy.
Add Eggs & Vanilla: Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
Combine Wet & Dry: Alternately add the dry ingredients and sour cream to the butter mixture, starting and ending with the dry ingredients. Mix until just combined.
Fold in the Pineapple: Gently fold in the well-drained crushed pineapple.
Bake: Pour the batter into your prepared pan and smooth the top. Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
Cool & Glaze: Let the cake cool in the pan for 10 minutes before transferring to a wire rack. Once cooled, mix the powdered sugar and pineapple juice, then drizzle over the top.
-
Drain pineapple well: Extra liquid can make the batter too wet and affect baking time.
-
Sift your powdered sugar: For a lump-free glaze, always sift before mixing.
-
Use a toothpick test: The cake is done when a toothpick comes out clean or with a few moist crumbs.
